Below you'll find 20 delicious Medjool date recipes to inspire you if you've got a pack of Medjool dates (or regular dates, they can also be used!) hanging around in your kitchen. Whether you're in the mood for something chocolatey, snacky, or a little bit indulgent- but- wholesome, there's plenty here to play with.

Scrolling my site, you've probably noticed I use dates a lot in my recipes. I honestly think they're one of the best natural sweeteners out there. I love their caramel- like texture and flavor plus they come with the bonus of fiber and minerals.
I've divided the recipes into three simple categories: drinks, baked treats like muffins and cakes, and no-bake treats- where dates are often used in the crust of no-bake cakes or blended into energy balls to naturally sweeten and hold everything together.
What are Medjool dates?
If you've ever had a proper Medjool date, you'll know… this isn't just a dried fruit. It's basically nature's caramel. 😉
Medjool dates come from the date palm tree and are known for being large, soft, and beautifully sticky with a rich, almost toffee-like flavor. They're naturally very sweet but what I love most about them is their fudgy and tender texture.
Medjool vs. Deglet Noor: What's the difference?
Here's the simple breakdown:
- Medjool dates: larger, softer, stickier, richer flavor (almost caramel-like), naturally very moist.
- Deglet Noor dates: smaller, firmer, slightly less sweet, a bit drier
I personally prefer Medjool for raw desserts and anything where dates are the star of the show. But if they're blended into something, Deglet Noor works beautifully too.
Can I Use Deglet Noor dates instead?
Yes. Most of the recipes in this roundup can absolutely be made with these smaller dates. In fact, a few of them are written with Deglet Noor to begin with. As a general rule, you can use about 2 Deglet Noor dates for every 1 Medjool date in a recipe.
That said, if a recipe specifically says to use Medjool dates, I'd stick with those and not swap them interchangeably. Their unique texture really makes a difference in certain recipes, especially where dates are the main ingredient.
Drinks
Below you'll find a handful of drinks and smoothies where dates add that natural caramel-like sweetness and sometimes also texture.

Baked Treats
These baked treats use (Medjool) dates as a natural sweetener instead of granulated sugar or liquid sweeteners like maple syrup. They add moisture, a gentle caramel-like sweetness and work beautifully in cakes and muffins. The only downside is that they can be quite sticky to work with.

No-Bake & Snacks
This category brings together energy balls, bars and raw slices, freezer treats, and no-bake cakes with those delicious date-based crusts that naturally hold everything together.
