Why You'll Love This Recipe
- This pineapple coconut smoothie is made from only a couple of handful ingredients.
- It's naturally sweetened and there's no hidden added sugar included.
- It's refreshing and bursting with tropical flavors- perfect for summer time.
Ingredients & Substitution Notes
- Pineapple: This recipe calls for frozen pineapple in order to create a creamy smoothie. You could use fresh pineapple and cut and freeze it yourself or use store-bought frozen diced pineapple. I do not recommend using canned pineapple chunks as they are usually very high in sugar. Also, make sure to use a very ripe, sweet pineapple to create a sweet smoothie. Check out this guide on how to pick a ripe pineapple.
- Milk of Choice: Any kind of non-dairy milk works- we love using oat milk because it's naturally quite sweet. But you can also use unsweetened almond milk, soy milk or cashew milk. If you don't want to use any plant milk, you could try coconut water instead.
- Coconut Milk Ice Cubes: To make the coconut milk ice cubes, you'll need a can of coconut milk. The higher the fat content of the milk, the creamier the smoothie will be. We like using full-fat creamy coconut milk but you can also use lite coconut milk or even coconut yogurt instead if you want to cut back on calories. You could replace the coconut milk with plain yogurt but this will result in a different taste.
- Dates: Are used instead of banana to naturally sweeten this pineapple smoothie. Both regular, small dates and Medjool dates will work. You could use maple syrup, agave syrup or honey instead.
- Vanilla Extract (optional): Adds some nice vanilla flavors. Can be omitted.
See recipe card for quantities.
How to Make a Frozen Pineapple Smoothie without Banana
This healthy pineapple smoothie requires 5 simple ingredients and 2 steps. It can easily be adjusted to personal taste by making it sweeter or adding other ingredients.
STEP 1: Prepare coconut milk cubes. Give the coconut milk a good shake so that you end up with a creamy milk (the coconut cream should not be separated from the water). Then add it to a pouring jug and pour the milk into an ice cube tray.
Put the tray in the freezer and freeze overnight. If you're not using store-bought frozen diced pineapple then cut the pineapple into little chunks and freeze in a ziplock bag.
STEP 2: Blend. Add all of the ingredients (frozen pineapple, coconut milk ice cubes, dates, milk, vanilla extract) to a high-speed blender.
And blend until smooth. Serve immediately with pineapple triangles and some coconut flakes on top (optional).
Variations
- Fruit Juice: This smoothie is made with coconut milk for more tropical flavors. Feel free to play around with the flavors by using fresh orange juice or coconut water instead.
- Thick Consistency: Start by adding around 1 ½ cups of milk for a thick smoothie and work your way up from there. You might already like the texture. You can always add more milk for a thinner consistency.
- Sweeter Smoothie: Feel free to add more dates or sweetener of choice for a sweeter smoothie.
Optional Add-Ins
- Other Fruits: Feel free to adjust this smoothie to personal taste by adding your favorite fruits. Tropical fruits such as mango, passionfruit, banana or oranges go very well with pineapple. But you could also try adding some frozen berries.
- Leafy Greens: You could boost this smoothie's nutritional benefits by adding a handful of leafy greens such as baby spinach or kale. The color won't be the same though!
- Seeds: Add a teaspoon of chia seeds, hemp seeds or flax seeds for some healthy fats.
- Protein Powder: Add a scoop of your favorite protein powder for a protein-rich smoothie.
- Banana: Even though this pineapple smoothie is purposely made without bananas, you could of course add one if you like. I recommend using frozen, ripe bananas for an extra creamy consistency.
- (Coconut) Yogurt: Feel free to add one or two tablespoons of plain greek yogurt or coconut yogurt which is my favorite!
Equipment
The stronger the blender, the smoother your drink will be, especially when there's frozen ingredients involved. I highly recommend using a high-powered blender such as a Vitamix or Blendtec.
If your blender has a tamper, you could help him by pushing the ingredients down towards the blades.
Storage
This pineapple smoothie keeps in the fridge for up to 1 day. Keep it in an airtight container such as a glass jar with a lid. Give it a good stir before serving.
Top Tip
- Ripe, Sweet Pineapple: The sweetness of the smoothie will depend on how ripe your pineapple is. So make sure to pick a very ripe one.
FAQs
Adding ice cubes might result in a creamy and thick smoothie initially, but also waters it down. Hence I don't recommend using fresh pineapple and ice cubes instead of frozen pineapple chunks.
Usually, tropical fruits such as mango, passionfruit, banana or oranges go really well with pineapple. I also like adding berries such as blueberries or strawberries. Feel free to experiment with what you like.
Pineapples are nutrient-dense while being relatively low in calories. They are high in vitamin C, manganese, copper and fiber. They are also a great source of antioxidants. You can read more about the health benefits of pineapple here.

Luan Brashaw says
I like to freeze my own frozen fruit, especially when its in season, cheaper to buy and at the peak of flavor and nutrition. In order to make my smoothie process easier for me, I cut the fruit into small-ish pieces, lay it out on a cookie tray/sheet pan/ or other flat freezable surface lined with a silicon mat or parchment paper. It take no time to freeze and the pieces are not frozen together in one big mass. It's easier for me to grab a handful of pineapple, mango, strawberries, blueberries or any other berry/cut fruit for my morning smoothie.

Hi Luan, oh I love that idea! Will definitely test this method next time. Thanks for sharing 🙂
