    Hidden Veggie Recipes

    I share lots of veggie-filled recipes here, but the ones below are made especially to hide the veggies. Hidden veggie meals are such an easy way to boost nutrition without changing up the meals we already love.

    From my point of view, it doesn't make sense to always disguise veggies (sooner or later kids (or adults) should learn can actually be delicious and fun when prepared the right way)- but there are definitely times when hiding veggies in food can be extremely useful. It's perfect if you want to get more in but aren't the biggest fan of their taste- or if your kids are in that fussy 'no veggies, please!' phase. These recipes keep things fun, delicious, and nourishing without anyone noticing what's inside. 

    To make things easier, I've divided them into mains, sweets, and drinks.

    Savory Recipes

    Hiding vegetables- or rather packing in as many as possible- is one of my favorite ways to make everyday savory meals extra nourishing. 

    As you'll see pasta sauces are my go-to for hiding veggies- because let's be real, who doesn't love pasta? Even the pickiest eaters usually do, which makes it the perfect base for slipping in some extra veggies.

    The trickiest part is often the greens (they're not exactly subtle), but with a little creativity they can blend right in. From hearty bolognese to vibrant green sauces, these recipes find fun, clever ways to pack in the veggies without anyone noticing. Perfect for kids (or adults!) who aren't the biggest veggie fans!

    Hidden Veggie Pasta Sauce
    This pasta sauce is creamy, rich, and packed with eight different vegetables- but unlike typical veggie sauces, it doesn't taste like veggies. Since pasta is a favorite even with fussy eaters, this one's a guaranteed family win.

    Tofu Bolognese
    A classic made meatless and filled with veggies- this tofu bolognese features a rich tomato sauce where you won't notice the onion, celery, or carrot- the roasted tofu adds so much flavor that it steals the show.

    Vegan Mac and Cheese NO cashews
    Another classic made vegan- my No Nut Mac and Cheese! The velvety cheese sauce is made with pumpkin instead of actual cheese, and with the addition of spices it tastes almost like the real deal.

    Green Sauce Pasta (10 min)
    Another pasta favorite- It comes together in just 10 minutes, is loaded with fresh flavor, and makes the perfect quick weeknight dinner. Creamy, wholesome, and a great way to switch things up from a classic red sauce.

    Vegan Walnut Pesto (5 min)
    This Vegan Walnut Pesto is packed with fresh basil for an extra boost of hidden greens. Creamy, flavorful, and perfect for pasta or as a versatile sauce.

    Avocado Bagels
    These homemade bagels have avocado blended straight into the dough- a sneaky hidden veggie twist that makes them extra soft, fluffy, and wholesome without anyone noticing.

    Sweet Recipes

    When most people hear "hidden veggies," they probably think of savory meals or main dishes- but honestly, one of my favorite things to do is tuck them into desserts. It's especially fun for kids (because they won't suspect a thing!) and also a great reminder of just how versatile veggies can be.

    Sometimes they're there for flavor- like naturally sweet pumpkin in brownies. Other times, it's more about texture- zucchini, for example, makes cakes and muffins extra soft and moist. And yes, pumpkin is the obvious go-to (you'll spot it a lot here), but it's not the only one that works. Carrots, spinach, even beets all have their place in sweet treats. Nobody would ever guess there are veggies in these recipes!

    Carrot Banana Muffins
    These Banana Carrot Muffins sneak in grated carrot (and banana) for natural sweetness and moisture. They're made in one bowl (a win for busy families!) and work beautifully as a quick breakfast or snack- especially for kids and toddlers.

    Hidden Veggie Chocolate Muffins
    These muffins are naturally sweetened and packed with zucchini, carrots, and spinach- three sneaky veggies that are totally undetectable. Rich, chocolatey, moist and probably the healthiest muffins I've ever created.

    Carrot Date Cake (Naturally Sweetened)
    A carrot cake that's naturally sweetened with dates and made extra moist with finely grated carrots you won't even notice. Perfect as a healthier cake or a wholesome breakfast loaf.

    Last but not least- drinks! Smoothies are one of the easiest ways to blend veggies right into your day- quick, tasty, and surprisingly kid-friendly.
