In this post, I’ve put two different flavor options together for you: a fruity option and then a chocolate caramel version featuring my Peanut Butter Caramel Sauce.
If you’re looking for an alternative to your favorite chia pudding or overnight oats, then give this recipe a try.
What is overnight weetabix
Weetabix are whole grain breakfast biscuits loaded with fiber. You can also pick up their gluten-free version if you’d prefer.
Overnight Weetabix started as a TikTok trend, in the same way as overnight oats and chia pudding only with Weetabix (Weet-Bix in Australia) soaked in milk and layered with different toppings.
It’s fun to make this recipe as you can customize it. So, whether you’re a fruity or chocolatey kind of person, my overnight Weetabix recipe will tick the box.
Why you'll love this recipe
- Delicious: When prepared overnight, Weetabix takes on a creamy texture that is both satisfying and delicious. You can also add your favorite toppings, such as fresh fruit or nuts, to customize the flavor to your liking.
- Stove-free: There is a heat and cooking-free recipe so no need to fire up your stove.
- Convenience: Overnight Weetabix is incredibly easy to prepare, requiring only a few minutes of meal prep time the night before, ready to go the next morning.
- Digestion: Weetabix is made from whole grains, which is an excellent source of fiber.
- Affordable: Weetabix is an affordable breakfast option.
Ingredients & substitution notes
- Milk Of Choice: any milk of choice – to make vegan overnight Weetabix I recommend unsweetened oat milk or almond milk.
- (Vanilla) Yogurt: I opted for vanilla yogurt but you can go for Greek yogurt, coconut, or plain yogurt.
- Defrosted Raspberries: I love using raspberries because they are easy to mash but you can also use fresh or frozen strawberries, blueberries or blackberries.
- Maple Syrup: You can swap this out for agave syrup, honey or a little dark brown sugar.
- Natural Peanut Butter: It's important to use natural peanut butter without any additives (apart from a little salt) for the recipe to work. Other nut butters will work too like almond or cashew – just make sure you stir the oil through before working with it.
- Chocolate Chips: Milk, dark, vegan or white chocolate chips will all work beautifully in this recipe.
