Unlike my milk-free French toast, this recipe uses almond milk, which makes it completely dairy-free but just as delicious.
I love making French toast with almond milk. It gives you the full French toast experience, just with extra flavor.
Why make French toast with almond milk?
Here are some of my top reasons to use almond milk for your French toast:
- Dairy-intolerance: It’s the perfect solution to lactose intolerance or dairy allergies.
- Health considerations: Almond milk contains less saturated and overall fat than regular milk. It is also cholesterol-free.
- Lower in calories than dairy milk.
- Tasty: It has a delicious, subtle, nutty flavor.
- Availability and convenience: Of course, you can make your own, but for convenience, most grocery stores stock almond milk.
Which almond milk to use
There are different types of almond milk available at most grocery stores. The one you choose comes down to your personal preference. Here is what to consider:
- Sweetened vs. unsweetened almond milk: Sweetened almond milk contains added sugars and is usually significantly sweeter than unsweetened almond milk, making it also higher in calories.
- Flavored vs. unflavored almond milk: Some types are infused with flavor such as vanilla or chocolate. Feel free to experiment! (I love vanilla).
- Fortified vs. unfortified almond milk: Fortified versions often contain vitamins and minerals such as vitamin D and calcium.
- Texture and consistency: Some brands are creamier than others. Depending on your preference you might opt for a thicker, creamier almond milk or a lighter more watery one.
- Homemade vs. store-bought
Personally, I almost always use fortified unsweetened almond milk with as few ingredients as possible, but it’s entirely up to you which one you pick.
Ingredients & substitution notes
- White bread slices: Use thick-cut, day-old white bread slices. The slightly stale bread will soak up the egg mixture (better than fresh bread) without becoming overly soggy. For unique flavor profiles, feel free to experiment with different bread types, such as whole wheat, sourdough, or even croissants. Challah bread and brioche bread are seriously delicious. You can also use regular sandwich bread; just be mindful that it will cook quickly.
- Eggs: Fresh eggs are essential for achieving that rich, velvety texture. I recommend organic, free-range.
- Almond milk: Adds a lovely nutty taste to the French toast. Use plain, unsweetened, if possible. You can also use regular cow’s milk (the classic recipe) or other dairy-free milk like soy, rice, oat milk or light coconut milk. Note that full-fat type milk will give a creamier texture and richer result.
- Cinnamon and nutmeg: These spices give the French toast an authentic taste. They are optional, but I recommend warming the flavor with cozy spices. Experiment with a mixture of ground ginger, cloves, and cardamom for different flavor ways.
- Vanilla extract: A dash of vanilla makes the French toast even more delicious. Use high-quality vanilla extract or vanilla paste if possible. Almond extract is a great alternative.

How to make French toast with almond milk
STEP 1: Add the eggs and almond milk to a large bowl or shallow dish.
STEP 2: Whisk them together until the eggs are incorporated into the milk.
STEP 3: Mix in the spices, salt and vanilla.
STEP 4: Grease a non-stick pan (preferable) or large skillet with some oil and heat it over medium heat. Soak the slices of bread in the egg mixture for 2-3 seconds. The bread should absorb the egg mixture but not be so saturated that it is soggy.
STEP 5: Cook the slices of bread in the hot pan.
STEP 6: Flip the bread over to cook the other side. Each side should be cooked until golden brown and crispy.

- High-quality bread: Use thick, hearty slices of delicious bread like challah, brioche, or French baguette.
- High-quality eggs: Use the best quality organic, free-range eggs you can get.
- Don’t oversoak the bread: It will turn out soggy and mushy if you soak it too long.
- Keep it warm: If making a large batch of almond milk French toast, keep the slices in the oven at 200F.
- Serve it immediately
Optional add-ins
- Cocoa powder: Add a little milk to some cocoa powder and stir it to a paste. Mix the paste into the egg and milk custard before soaking the bread.

- Granola: Spoon over some of my tasty Applesauce Granola. This topping gives a lovely contrast to the soft, cozy texture of the French toast.
- Shredded coconut: Toast it and add a little for deeper flavors.
- Powdered sugar: A light dusting of powdered sugar looks so pretty and tastes dreamy.
- Whipped cream: Dollop fresh whipped cream or my Vegan Whipped Cream.
- Yogurt: Top with Greek or dairy-free yogurt for a creamy contrast to the warm French toast.
- Caramelized bananas: Sauté banana slices in butter and a touch of brown sugar until caramelized and spoon over the French toast.

- Serve immediately: I highly recommend eating your French toast straight out of the pan. This is when it is at its best: crispy on the outside and soft in the center.
- To store: If you have leftovers, let them cool completely before popping them into a sealed, airtight container. The leftover French toast will keep for about 2 days. The slices must be reheated in a pan or in the oven.
- To reheat: To reheat them, lay them in a single layer on a baking sheet and warm them at 350F (180C) for about 10 minutes.
- Freezing is not recommended.

- 2 eggs *I recommend organic, free-range
- ¾ cup almond milk
- 1 teaspoon vanilla extract *optional
- ½ teaspoon cinnamon *optional
- ½ teaspoon nutmeg *optional
- tiny pinch of salt
- oil to grase the pan
Instructions
- Whisk together wet ingredients: In a mixing bowl whisk together eggs and almond milk with a whisk or a fork until the egg is fully incorporated into the milk.2 eggs, ¾ cup almond milk
- Spices: Add in the spices (cinnamon, nutmeg, vanilla extract, salt) and whisk again.½ teaspoon cinnamon, ½ teaspoon nutmeg, 1 teaspoon vanilla extract, tiny pinch of salt
- Heat your pan: Grease a (preferably non-stick) pan with some oil. Heat the pan over medium heat.
- Prep the bread: Once the oil is shimmering, dip each slice of bread into the egg mixture. Let soak for 2-3 seconds. You want it to be saturated with egg mixture but not soggy.
- Cook the French toast: Add the soaked bread slices to the pan. Cook for about 1-2 minutes on each side or until golden brown and crispy.
- Serve: Remove from the pan and place on a plate. Add toppings of choice and enjoy!
