Ingredients

Fresh Mango Juice

  • 8.2 oz mango cubes (~1 medium mango, peeled + cubed)
  • 3 tablespoon maple syrup
  • juice of 1 fresh lime
  • ⅓ + ⅛ cup water

To assemble (1 serving)

  • 3-4 mint leaves
  • 1 tablespoon fresh lime juice
  • ½ teaspoon brown sugar (optional)
  • ¼ cup sparkling water
  • ice cubes
  • sweetener to taste

Instructions

  • Add fresh mango cubes, maple syrup, water and lime juice to a (high speed) blender and blend until smooth.
  • To a serving glass, add the fresh mint leaves, sugar (optional) and lime juice. Use a muddler or a spoon to gently muddle the mint leaves and lime juice together, releasing their flavors.
  • Add ¼ cup of fresh blended mango juice followed by some ice cubes. Stir the mixture well, ensuring the mint leaves and sugar are evenly distributed
  • Top off the glass with club soda, leaving a little room at the top. Give it a gentle stir to combine. The amount of soda needed depends on personal preference. Start with ¼ cup and work your way up from there.
  • Garnish the glass with a slice of mango and a sprig of mint, if desired.

  • Use ripe mangoes: Fresh, ripe produce is best – you want a rich mango nectar in your mojito.
  • Use fresh ingredients: For the best flavor, use fresh ingredients such as freshly squeezed lime juice and fresh mint leaves.
  • Muddle gently: When adding mint leaves to the mocktail, gently muddle them to release their essential oils. Be careful not to over-muddle and turn the leaves bitter.
  • Adjust sweetness and acidity: Taste the mocktail as you make it, and adjust the sweetness and acidity to your liking. You can add more mango puree, maple syrup or lime juice to balance the flavors.
  • Chill your individual glasses: To keep the mocktail cold and refreshing.
  • Turn it into a cocktail: For a boozy version, add a shot of white rum.
  • Other flavored sodas: Instead of club soda, you can use flavored sodas such as ginger beer or tonic water.
