Add fresh mango cubes, maple syrup, water and lime juice to a (high speed) blender and blend until smooth.
To a serving glass, add the fresh mint leaves, sugar (optional) and lime juice. Use a muddler or a spoon to gently muddle the mint leaves and lime juice together, releasing their flavors.
Add ¼ cup of fresh blended mango juice followed by some ice cubes. Stir the mixture well, ensuring the mint leaves and sugar are evenly distributed
Top off the glass with club soda, leaving a little room at the top. Give it a gentle stir to combine. The amount of soda needed depends on personal preference. Start with ¼ cup and work your way up from there.
Garnish the glass with a slice of mango and a sprig of mint, if desired.
