Instructions

  • Give all the veggies and fruits a good wash before using them.

Bread

  • Start by toasting the bread either in a toaster or oven.
Toaster: Place the slices into the slots of your toaster. Adjust the toasting level according to personal preference.
Oven: Set your oven to broil and let it preheat. Lightly brush one side of each slice with olive oil. Add the slices to a baking tray lined with parchment paper and bake for about 4-5 minutes on each side or until golden brown and crispy.

Cottage Cheese

  • Spread an even layer of cottage cheese (about 2 tbsp, or more or less depending on personal preference) on each piece of toast.

Toppings

  • Finish off by adding your favorite toppings. Feel free to play around with different toppings too. You can find more topping ideas above!

Notes

  • High quality ingredients: Use good quality ingredients. This will make a big difference to the result. From the bread (I love sourdough or whole grain bread) to creamy cottage cheese and bright, fresh produce.
  • Toast bread properly: It should be crunchy but not burned. White bread will need around 4 minutes on each side in the oven, multigrain bread usually between 5 and 6 minutes on each side.
  • Salt and Pepper: If you’re making a savory toast, season it well with salt and black pepper.
  • Serve immediately for the best results.
  • Experiment! Use this as a base recipe, and enjoy coming up with creative toppings and combinations.
