Applesauce Oatmeal

Creamy applesauce oatmeal made with rolled oats, unsweetened applesauce and cinnamon. Naturally sweet, ready in about 10 minutes, and easy to make vegan.

Ingredients

  • ¾ cup (80 g) of rolled oats (large flaked) *see notes
  • 1½ cups (345 ml) water *depending on how creamy you like your oats
  • 1 cup (260 g) unsweetened applesauce
  • ½ cup (115 ml) milk of choice *oat milk, almond milk, dairy milk
  • ½ teaspoon cinnamon
  • tiny pinch of salt

Instructions

  • Put the oats, water, applesauce, cinnamon and salt into a saucepan. Start with 1½ cups water and add more if you like thinner oatmeal.
    ¾ cup of rolled oats (large flaked), 1½ cups water, 1 cup unsweetened applesauce, ½ tsp cinnamon, tiny pinch of salt
  • Simmer on low heat for about 5–7 minutes, stirring now and then, until the oats have absorbed most of the liquid.
  • Add the milk and simmer for another 2 minutes.
    ½ cup milk of choice
  • Let it sit for a few minutes (it thickens as it cools). Taste, and sweeten only if you want it sweeter (see notes).
  • Serve with your favorite toppings: caramelized apples (see notes), a spoonful of nut butter, Greek yogurt, granola or extra applesauce.

Notes

  • Caramelized apple topping: Simmer 1 diced apple with 1–2 tablespoon maple syrup, a pinch of cinnamon and a splash of water until soft. Spoon over the oatmeal.
  • Applesauce: Check out my Unsweetened Applesauce Recipe or use a store-bought one.
  • Sweetener: Optional. With unsweetened applesauce you may not need any. If you want it sweeter, stir in 1-2 tablespoon maple syrup, honey, agave or a mashed banana.
  • Meal prep: Make it the evening before and keep it in the fridge for up to 3 days. Add a splash of milk before serving, and add toppings shortly before serving.
