Instant Pot + Stovetop

Ingredients

Set instant pot on saute mode. Add onion, garlic and leek and cook until onion is translucent.

Step 1

Add potato cubes, veggie broth, salt & pepper. Close the lid and pressure cook on high for 10 minutes.

Step 2

Quick release using a knive or similar.

Step 3

Blend 1/2 of the soup with an immersion blender (or less if you prefer a chunkier soup).
