Sweet Potato Curry

easy one pot meal

Ingredients

Heat some olive oil in a pan and fry onion and garlic until translucent.

Step 1

Add the spices, chopped potatoes and a pinch of salt.

Step 2

Add the sweet potato cubes, lentils and vegetable broth. Let simmer until lentils are soft and ready to eat.

Step 3

Once the sweet potatoes and lentils are soft, add the coconut milk and let simmer for another couple of minutes.

Step 4

Serve with a side dish of choice such as rice or naan.
