Red Lentil Dahl


with coconut milk


In a large saucepan, fry onion in some olive oil until translucent.

Step 1

Add minced garlic and ginger.

Step 2

Add the spices and fry for another 30 seconds...

Step 3 bring out their flavors.

Step 4

Add red split lentils, chopped tomatoes, veggie broth and 3/4 of the coconut milk.

Step 5

Let simmer with a lid on for about 15 minutes.

Step 6

Add the remaining coconut milk...

Step 7

...and let simmer for 5 more minutes.

Step 8

Serve with some homemade garlic naan and/or rice.
