Mexican Bean Soup

Sauté onion, garlic and celery in a large skillet.

Step 1

Add the spices (thyme, cumin, paprika, smoked paprika) and fry for 30 seconds.

Step 2

Add bell peppers, veggie broth, salt and kidney beans.

Step 3

Bring to a boil and let simmer on low for 15 minutes.

Step 4

Add parts of the soup to a blender and blend until smooth.

Step 5

Transfer back to the soup and add sweet corn.

Step 6

Give it a good stir and enjoy with toppings of choice.
