Instant Pot Potato Soup

made without heavy cream

Ingredients you'll need

Step 1

Set instant pot on saute mode. Add onion, garlic and leek and cook until onion is soft and translucent.

Step 2

Add potato cubes, veggie broth, salt & pepper. Close the lid and pressure cook on high for 10 minutes.

Step 3

Quick release using a knive or similar.

Step 4

Blend 1/2 of the soup, making sure to leave some potato chunks.

Step 4

Add toppings of choice (mushroom "bacon", cheese, sour cream...) & enjoy!
