Sweet Potato Lentil Coconut Curry

It’s is super nutritious!  It contains lentils- they are a great source of plant based protein. Ready in less than 30 minutes! – It’s freezer- and meal-prep friendly!

Ingredients you'll need

Step 1

Roast garlic and onions until translucent.

Step 2

Add chopped tomatoes, spices...

Step 3

...lentils, veggie broth and sweet potatoes to a large saucepan.

Step 4

Let simmer until a thick sauce forms. Add coconut milk and cook for a couple of minutes longer.
