Chili con Carne

easy one pot meal 

Ingredients

Soak TVP (textured vegetable protein/ soya mince) in veggie broth. Set aside.

Step 1

Heat some olive oil in a pan and fry onion, garlic and celery until translucent and golden brown.

Step 2

Add the spices and fry for a couple of seconds more.

Step 3

Add chopped carrots, chopped tomatoes, soaked TVP, lentils and veggie broth and let simmer.

Step 4

Add beans and sweet corn.

Step 5

Give it a good stir, taste and adjust spices.

Step 6

Serve as is or with a side dish of choice such as rice or naan.
