Oat Milk Pumpkin Spice Latte

This homemade pumpkin spice latte includes 5 simple ingredients and is vegan, dairy-free and lower in fat and sugar than more regular psl recipes. The best part is that it only takes about 5 minutes to prepare.

Ingredients

  • 2 shots of espresso
  • 1 cup oat milk *see notes
  • 2 tablespoon pumpkin puree *store-bought or homemade
  • 1-2 tablespoon maple syrup
  • 1 teaspoon pumpkin spice blend or gingerbread spice

Instructions

  • Add all of the ingredients (coffee, pumpkin purée, pumpkin spice, maple syrup and oat milk) to a small saucepan.
  • Heat over medium heat for 30-40 seconds while constantly stirring with a whisk. We want the milk to be warm but not boiling. If you have a blender, you can throw everything into a blender and blend on soup-mode so it heats.
  • Taste the latte and add more maple syrup if you like it sweeter.
  • Pour into a large coffee mug and top with some homemade vegan whipped cream.

Notes

  • Oat milk: To achieve a silky texture in a dairy-free pumpkin spice latte, look out for a barista version of your favorite oat milk. They are usually thicker in texture and froth really well compared to regular oat milk drinks. We love Oatly’s Oat Drink Barista Edition. Alternatively, you could use almond or soy milk.
  • Coffee: It’s important to include some high-quality, great-tasting coffee in this recipe. The stronger the coffee, the more intense this latte tastes.
  • 100% pumpkin puree: You can either use store-bought pumpkin purée or check out the recipe for our super quick and easy Homemade Pumpkin Puree here, both work fine!
  • Froth milk: If you prefer a frothier latte, mix together all of the ingredients in a small saucepan except for the milk. Froth the oat milk using a milk frother (or use a handheld frother) until heated and pour it on top of the coffee-pumpkin mix.
