Ingredients

  • 1 courgette, cut into pieces
  • 2 handfulsof cherry tomatoes
  • 3 garlic cloves (skin on)
  • handful of basil
  • handful of spinach
  • 3 tablespoon olive oil
  • handful of green olives, pitted
  • handful of black olives, pitted
  • handful of capers
  • onion powder

Instructions

  • Preheat oven to 180°C (356°F).
  • Put courgette, cherry tomatoes and garlic cloves (skin on) onto a baking tray lined with parchment paper. Add a pinch of salt and olive oil and bake for 20 minutes.
  • Cook pasta according to package instructions.
  • Then put courgette, basil, spinach, olive oil, olives and onion powder into a food processor. Blend until smooth.
  • Add pesto to the pasta, add capers and cherry tomatoes, give it a good stir, enjoy!
