Watermelon Mojito Mocktail

This non-alcoholic watermelon mojito cocktail makes the perfect refreshing drink on hot days. It’s naturally vegan and ready in no more than 5 minutes. It can also easily be turned into an alcoholic drink.

Ingredients

  • 10 oz fresh watermelon
  • 1 cup frozen strawberries
  • ¼ cup maple syrup
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar or sub more maple syrup
  • 3-4 fresh mint leaves
  • sparkling water, chilled
  • ice flocks/ cubes
  • white rum *optional if you want to make a traditional mojito

Instructions

  • The watermelon strawberry mix yields 3 servings (depeneding on the size of your serving glass). Sugar, lime juice and mint yield 1 serving.
  • Add frozen strawberries, watermelon and maple syrup to a blender. Blend until smooth. You will need to use a tamper to push the fruits towards the blades for the first couple of seconds. Do not use more liquid instead, otherwise the mojito can taste quite watery.
  • To a serving glass, add mint leaves, 1 teaspoon of sugar and lime juice.
  • Slightly dissolve sugar by stirring with a teaspoon.
  • Add ice cubes up until about ⅓ of the glass (see photos).
  • Then add the watermelon mix from the blender (ice cubes should be covered).
  • Top off with sparkling water.
  • Garnish with additional mint leaves and serve right away.

Notes

  • Serving Size: The watermelon strawberry mix yields 3-4 servings (depending on the size of your serving glass). Sugar, lime juice and mint yield 1 serving.
  • Traditional mojito: can easily be turned into an alcoholic drink by adding some white rum (~ 1 ½ fluid ounces/ 45ml). 
  • Storage: Watermelon-strawberry mix keeps in the fridge for up to 2 days (store in an airtight container and give it a good stir before using it).
  • Tips:
    • Choose a seedless, ripe watermelon if possible. 
    • For the drink to be or stay cold and refreshing, the sparkling water should be chilled and cold.
