Healthy Super Seed Chocolate Snack Bar

These Healthy Super Seed Chocolate Snack Bars are a healthy alternative to any store-bought snack bars. It's dairy-free, gluten-free, refined-sugar free and could also be made oil-free.

Ingredients

Bars

  • 2 cups (200g) ground roasted hazelnuts
  • 12 (=1 cup/ 180g) Medjool dates, pitted
  • 3 tablespoon smooth peanut butter *see notes
  • 5 tablespoon maple syrup
  • cup (50g) blanched roasted hazlenuts
  • cup (50g) brazil nuts
  • cup (50g) sunflower seeds
  • cup (50g) peptias

Chocolate Layer

  • 100g dark (vegan) chocolate
  • 1 teaspoon coconul oil *optional, see notes
  • ¼ cup (30g) peptias
  • ¼ cup (30g) blanched roasted hazelnuts

Instructions

Bars

  • Add ground hazelnuts and dates to a food processor and blend until a sticky mass forms, this might take at least 5 minutes. Scrape down the sides around every 30 seconds.
  • Then add peanut butter and maple syrup and blend again.
  • Add blanched hazelnuts, pepitas, sunflower seeds and brazil nuts and pulse a couple of times, scraping down the sides until everything is well combined.
  • Transfer the mix to a baking dish lined with parchment paper. Firmly press down using as poon or your hands.

Chocolate Layer

  • Put sunflower seeds and hazelnuts to the food processor. Pulse a couple of times until coarsely ground.
  • Melt chocolate and coconut oil over low heat. Pour over bars.
  • Then sprinkle on sunflower seeds and hazelnuts and put in the fridge until chocolate is hard.

Notes

  • Peanut Butter: I highly recommend using peanut butter consisting of 100% peanuts without any additives. 
  • Coconut Oil: To keep this recipe oil free, melt chocolate in a water bath.
