This Beetroot Smoothie is a delicious smoothie recipe that contains a wide variety of plants. With its earthy flavors and creamy texture, it could be enjoyed as a breakfast drink or nutritious snack.

Ingredients

  • 1 small raw beetroot, peeled *pre-cooked works as well
  • 1 frozen banana
  • ½ cup frozen raspberries *or other type of berries
  • 1 carrot *chopped into pieces
  • 1 orange *peeled
  • 2 tablespoon yogurt
  • 1 ¼ cup non-dairy milk *unsweetened almond, soy or fruit juice, see notes

Instructions

  • Place all of the ingredients into a (high speed) blender and blend until smooth.
  • Taste and adjust sweetness and consistency. Add more banana, dates or maple syrup for a sweeter smoothie. Add more liquid for a thinner texture.

Notes

  • Milk: I used unsweetened soy milk but you could use any non dairy milk of choice such as unsweetened almond milk or oat milk. I have not tried this smoothie with regular cow's milk. Instead, you could use orange juice or apple juice but it alter the flavor.
  • Beet Flavor Intensity: You can easily adjust the intensity of the beet flavors in this smoothie. For more suble flavors, use only ½ a beetroot.
  • Other fruits: Instead of raspberries you could use any type of berries such as frozen blueberries, strawberries or frozen mixed berries. You could also replace the berries with more tropical fruits such as frozen pineapple or mango. 
  • Powerful Blender: For best results I recommend using a high speed blender and chopping the ingredients into smaller pieces.
  • Peel Beetroot & Carrot: I recommend peeling both the fresh beetroot and carrot.
