Overnight Weetabix (2 Flavors)

Overnight weetabix is super delicious and a great way to start your day. It's a great make-ahead breakfast alternative to chia seed pudding and is a hot food trend right now.

Ingredients

Weetabix Base

  • 2 weetabix
  • ½ cup milk
  • 3 tablespoon yogurt of choice (Greek, soy, coconut...)
  • 1 tablespoon maple syrup *optional

Fruity

  • ½ cup frozen raspberries, defrosted
  • ½ cup vanilla yogurt of choice
  • 2 maple syrup *optional

Chocolate Peanut Butter

  • 1 tablespoon natural peanut butter *see notes
  • 2 tablespoon maple syrup
  • 2 tablespoon chocolate chips of choice (vegan, dark chocolate...)

Instructions

The Base

  • Crumble weetabix into a bowl or glass jar.
  • Add milk, yogurt and maple syrup and give it a good stir. Put in the fridge.

Fruity Rapsberry Yogurt Layer (Option 1)

  • Add vanilla yogurt and defrosted raspberries to a small bowl. Mash with a fork until most of the raspberries are muddled.
  • Add the layer on top of the weetabix layer. Close with a lid and put in the fridge overnight.

Caramel Chocolate Layer (Option 2)

  • Whisk together peanut butter and maple syrup. Then add the layer on top of the weetabix layer.
  • Melt chocolate chips in a microwave. Spoon the melted chocolate over the caramel layer. Close with a lid and put in the fridge overnight.

Notes

  • Peanut Butter: Use natural peanut butter without any additives apart from a bit of salt.
  • Adjust sweetness: You can skip the maple syrup if you want to cut back on sugar or prefer a less sweet option.
  • Be creative: play around with flavors and don’t be afraid to try combinations that are new to you.
  • On-the-go: prepare them in a portable container so have them ready next morning.
