Ingredients

Roasted cubed butternut squash in the oven until soft.

Step 1

Toasted pine nuts in a large pan over medium heat until slighly golden. Then remove from the pan.

Step 2

Fry green onion and garlic in some olive oil over medium heat.

Step 3

Add both chopped and minced mushrooms and cook until mushrooms are crispy.

Step 4

Add the other ingredients: cooked chestnuts, crumbled feta, roasted butternut squash and pine nuts and stir until well combined.

Step 5

Add the mushroom mix to the center of a parchment paper.

Step 6

Roll the filling inside the paper like a sausage.

Step 7

Place the compressed filling into the center of a puff pastry.

Step 8

Brush with eggwash and bake for 35 minutes.
