Banana Cookies

Ingredients

Add 1 very ripe banana to a bowl or plate.

Step 1

Mash with a fork until smooth (small chunks are fine).

Step 2

In a large bowl, whisk together dry ingredients (ground almonds, baking powder, sugar, salt).

Step 3

Add wet ingredients (mashed banana & olive oil) to the dry ingredients.

Step 4

Stir with a spatula until well combined and a sticky dough forms.

Step 5

Scoop out individual cookies using a cookies scoup. Flatten them a damp fork.
