Ingredients you'll need

Step 1

Then soak the dried mushrooms in your veggie broth...

Step 2

...as well as the cashews in very hot water & set aside.

Step 3

In a large pot fry onion, garlic and celery, before adding the fresh mushrooms. Let them cook for a couple of minutes.

Step 4

Then add carrots and veggie stock and let simmer for about 15 minutes

Step 5

Put all the ingredients for the cashew cream into your high speed blender and blend until smooth.

Step 6

Then add it back to the mushroom mixture. This will create a delicious cream of mushroom soup. Add rice if you want.
