Ingredients you'll need

Heat some olive oil over medium heat and fry garlic and onion.

Step 1

Add bell peppers, 1 tin of chopped tomatoes, spices, maple syrup and vegetable broth.

Step 2

Let simmer for 15 minutes until you end up with a thick sauce.

Step 3

 Add chickpeas and (vegan) chorizo. Let simmer for 5 minutes more.

Step 4

Add eggs and let simmer with a lid on for another 5 minutes.

6. Add (vegan) feta and garnish with fresh herbs
