Pumpkin Soup


with coconut milk


Peel and deseed the pumpkin halves.

Step 1

Cut the pumpkin into bite-sized 1-inch pieces.

Step 2

Saute onion and garlic in some olive oil over medium heat.

Step 3

Add pumpkin cubes, carrots and spices (curry + cumin powder, salt + pepper).

Step 4

Saute for 1-2 minutes to bring out the flavors even more.

Step 5

Add the veggie broth and let simmer with a lid for about 20 minutes.

Step 6

Let soup cool, then transfer to a high-speed blender, add the coconut milk and blend until smooth.
