Pumpkin Carrot Soup

Ingredients

Peel and deseed the pumpkin.

Step 1

Cut into bite-sized pieces.

Step 2

Fry onion and garlic in some oil over medium heat.

Step 3

Add cubed pumpkin, carrots and spices (curry + cumin powder, salt + pepper).

Step 4

Fry for 1-2 minutes to help enhance the flavors.

Step 5

Add the veggie broth and let simmer for about 20 minutes.

Step 6

Let soup cool, then transfer to a high-speed blender and blend until smooth. Gently reheat and serve with toppings of choice.
