Protein Pancakes

In a large bowl, whisk together flour, protein powder, baking powder and salt.

Step 1

In a separate bowl, whisk together eggs, maple syrup, (plant) milk and yogurt.

Step 2

Add the wet ingredients to the dry ingredients.

Step 3

Heat some oil in a pan over medium heat. Add 1/4 cup of pancake batter. Cook for 1 minute then add blueberries.

Step 4

Once you can see little bubbles forming, flip the pancake and cook the other side.

Step 5

Temperatur of your pan:  anything between medium-low to medium Patience is key: Don't flip too early!   Clean the pan: Wipe out the pan between each pancake using a kitchen roll.
