Potato  Soup

Ingredients

Saute onion and garlic in some olive oil over medium heat.

Step 1

Add potato cubes, veggie stock, salt & pepper.

Step 2

Let simmer for about 15 minutes or until potatoe cubes are fork-tender.

Step 3

Blend 1/2 of the soup with a hand blender (or less if you prefer a chunkier soup).

Step 4

Add creme fraiche (or sour cream) and cheddar. Serve with toppings of choice.
