Mango Cheesecake

Put all the crust ingredients into a food processor and blend until a sticky dough forms.

Step 1

Press the dough into a cake tin using your fingers.

Step 2

Add coconut cream and maple syrup to a saucepan and let simmer until fully dissolved.

Step 3

Add the mix to a blender, together with the fresh mango chunks.

Step 4

Blend until smooth.

Step 5

Add the mix back to the saucepan and add the yogurt.

Step 6

Dissolve agar agar and cornstarch in plant milk.

Step 7

Then add the agar agar-mix  to the mango mix. Let simmer for 2 minutes to activate the agar agar.

Step 8

Pout the mix from the saucepan onto the crust and refrigerate.

Step 9

Repeat the same steps for the second mango layer.
