Indian Tofu Curry




Press tofu, to remove any excess water. Then cut into bite-sized cubes.

Step 1

Fry tofu in some oil until golden brown and crispy. Then remove from the pan, set aside.

Step 2

Cook onion and garlic until translucent. Then add spices and fresh ginger.

Step 3

Add the diced tomatoes, season with salt and let simmer for 5-8 minutes.

Step 4

Transfer the tomato sauce to a blender. Add the veggie broth and blend.

Step 5

Add the sauce back to the saucepan. Add the coconut milk.

Step 6

Finally add the fried tofu and let simmer for 1 minute. Serve with plain rice or naan.
