Indian Cauliflower Curry

Ingredients

Season cauliflower florets with olive oil, salt and garam masala. Roast for 30 minutes in the oven.

Step 1

Fry onion, garlic and ginger in a large saucepan over medium heat.

Step 2

Add spices (garam masala, curry, cumin, turmeric, coriander) and fry for another 30 seconds.

Step 3

Add chopped tomatoes and let simmer for 15 minutes.

Step 4

Until a thick paste forms.

Step 5

Transfer the mix to a blender. Add cashews and plant milk and blend until smooth.

Step 6

Add the sauce back to the saucepan. Add roasted cauliflower and chickpeas.
