Step 1

IF you want to include the cherries, start by caramelizing the cherries.

Step 2

Melt chocolate in a water bath or microwave.

Step 3

Put the silken tofu, melted chocolate and brown sugar into a food processor and blend until smooth.

Step 4

Add cherries (optional) and transfer mousse to ramekins or small glasses. Refrigerate.
