– Super simple recipe with only 8 ingredients. – It’s a high protein recipe and refined sugar free. – They can easily be made vegan.

Ingredients you'll need

Step 1

Add  all the dry ingredients (flour, protein powder, baking powder, pinch of salt) to a medium bowl and stir until well combined.

Step 2

In a separate bowl, whisk eggs, milk, yoghurt and maple syrup until well combined

Step 3

Add your wet ingredients to the dry ingredients and mix thoroughly

Step 4

...until a smooth batter forms. Do not overmix! Also don't yet fold in blueberries at that point.

Step 5

Scoop out about 4 tbsp of the pancakes batter and cook pancakes on low heat. Press a couple of blueberries into the dough.

Step 6

Flip with a spatula, cook also on the other side for about 1 min. Then remove from pan.
