Banana Muffins


with applesauce


Mash banana in a bowl with a fork or potato masher.

Step 1

Whisk together all of the dry ingredients (flour, baking powder + soda, sugar, salt) in a large bowl.

Step 2

Carefully separate egg yolk and egg white. Then add the yolk to the dry ingredients.

Step 3

Add all of the other wet ingredients (applesauce, vanilla, oil, banana).

Step 4

And stir with a spatula until well combined.

Step 5

Beat the egg white until you can see stiff peaks forming.

Step 6

Carefully fold in whipped egg whites.

Step 7

Fold in walnuts.

Step 8

Transfer the muffin dough to a muffin tin lined with muffin liners and bake for 15 minutes.
