    Guacamole Sandwich

    This Guacamole Sandwich includes some delicious Homemade Guacamole and fresh greens. It can easily be adjusted to personal taste and makes the perfect quick and easy breakfast, lunch or dinner!

    A simple avocado toast makes a great healthy snack or easy-to-prepare lunch on a busy weekday. You can prepare it in the morning and bring it with you to lunch or enjoy it right away.

    Why You'll Love This Recipe

    • It's packed with healthy wholefood ingredients.
    • It comes together in no more than 15 minutes.
    • It's super easy to pack- the perfect portable lunch!
    • It's vegan, dairy-free and can easily be made gluten-free by picking a gluten-free bread of choice.

    Ingredients & Substitution Notes

    • Avocado: is the main ingredient we'll need to prepare our creamy guacamole. The only tricky thing about avocados is using them when they are perfectly ripe. Pick an avocado that's dark green or nearly black in color. It should yield to firm, gentle pressure. You can read more about how to pick the perfectly ripe avocado here.
    • Plain Yogurt: It adds some nice creaminess to the texture. To keep this guacamole vegan, use a plant-based yogurt such as soy yogurt. Otherwise, I'd suggest Greek yogurt.
    • Lemon/ Lime Juice: Adds some tangy flavors. You could either use lime or fresh lemon juice.
    • Garlic Powder: Enhances this guacamole's natural flavors. Could be replaced with onion powder.
    • Salt
    • Guacamole Optional Add-Ins: chopped cherry tomatoes, minced cilantro, red onion

    How to Make a Guacamole Sandwich

    This avocado sandwich also includes some cucumber, lettuce and micro greens. It's super easy to make and ready in no time!

    Equipment-wise all you'll need is a cutting board and a knife.

    STEP 1: Prepare the guacamole. Add the pitted avocado and yogurt to a medium-size mixing bowl.

    Mash avocados with a fork until smooth and creamy.

    Add garlic powder, salt and lemon juice and stir well. Taste and adjust to personal taste by adding more salt or other ingredients such as minced tomatoes, cilantro or red onion.

    STEP 2: Prepare the sandwich. Spread guacamole onto both bread slices.

    Top with your toppings of choice such as cucumber slices, lettuce, micro greens or other toppings (see suggestions below).

    Alternatively, you could toast the bread before adding the spread or grill the whole sandwich in a pan.

    Top Tips

    • Take-away: This guacamole makes the perfect take-away lunch. You could prepare it in the morning before leaving the house and enjoy it as lunch later in the day. Store it in an airtight container or wrapped in some paper towels.
    • Add cucumber just before serving: If you don't enjoy your sandwich right away but pack it for lunch, I highly recommend bringing the cucumber slices with you in an extra container. Otherwise, your sandwich bread will end up soggy.

    Variations & Add-Ins

    What makes this sandwich so great is that it's super versatile. You can create so many different flavors by adding more ingredients of choice. Some ideas are listed below.

    • Bread: This sandwich can taste entirely different depending on the type of bread you use. My favorite one is dark sourdough bread but you can try regular toast or gluten-free bread to keep this sandwich gluten-free. Bagels also work great, try my homemade Avocado Bagels as a base.
    • Toasted Bread: Add the bread slices to an electric toaster before adding the spread. Alternatively, you can toast the bread slices in a pan on medium-high heat.
    • Cucumber: Adds some nice crunchiness and texture to the sandwich.
    • Lettuce: A love adding a couple of fresh lettuce slices.
    • Microgreens of choice: I love using fresh watercress but feel free to use any type of microgreens you like.
    • Cheese: Add a slice of cheese (my favorite being cheddar cheese) on top of the guacamole. Or turn this into a guacamole grilled cheese sandwich- add a cheese slice and toast the sandwich until the cheese has melted. Choose a vegan or dairy-free cheese to keep this vegan.
    • Hummus: Add some homemade hummus as a second layer of spread.
    • Egg: Feel free to add some eggs to your sandwich. You can either slice up some hard-boild eggs or serve them sunny-side-up fo you prefer runny yolks.
    • Olive Oil: Sprinkle with some olive oil for some additional flavor and healthy fats.
    • Pepper: I also like topping this sandwich off with some black pepper.
    • Chili Flakes: Turn this into a spicy guacamole by adding a teaspoon of chili flakes on top.
    • Jalapeno Pepper: Prefer it even spicier? Add some jalapeno peppers!
    • Mango Habanero Salsa: Add some homemade mango habanero salsa as a topping.
    • Cucumber Pico de Gallo: Instead of adding plain cucumber, you could try our cucumber pico de gallo.

    Serving Suggestions

    • Lunch: Enjoy this delicious sandwich as a light, stand-online lunch.
    • Side Dish: Enjoy it alonside your favorite soup or try it with our Mexican Bean Soup or Broccoli Pea Soup or Quick Tomato Soup.

    Storing

    • To store: Store any leftover guacamole separate from the bread in an airtight container in the fridge for up to 2 days.

    Ingredients

    Basic Guacamole

    • 2 avocados
    • 2 tablespoon (soy) yoghurt *or regular Greek yogurt
    • 1 teaspoon lemon juice
    • ¼ teaspoon garlic powder
    • pinch of salt

    Optional Guacamole Add-Ins

    • ½ small red onion ,minced
    • 5 cherry tomatoes ,chopped
    • handful of fresh coriander ,minced

    Sandwich Ingredients

    • 8 slices of sandwich bread *see notes
    • cucumber, lettuce, micro greens or other toppings of choice (see below)

    Instructions

    • Slice the avocados in half and remove the pit. Scoop out the flesh using a spoon.
    • Add avocado flesh, yogurt, lemon juice, garlic powder and salt to a small bowl or soup plate.
    • Mash with a fork to desired consistency (creamy or chunky).
    • Taste and adjust salt.
    • Adjust the guacamole to personal taste by adding any of the additional ingredients (chopped tomatoes, minced red onion, minced coriander) or leave it as it is.
    • Toasted Bread: If you want to enjoy this spread on a toasted bread, add your sandwich bread slices to an electric toaster and toast until crispy.
    • Then spread a generous amount of guacamole onto each slice of bread.
    • Add any additional toppings of choice (see ideas below) and enjoy!

    Notes

    • Guacamole Variations: For the basic guacamole recipe you'll only need 5 simple ingredients. However, feel free to turn this into a more traditional guacamole by adding chopped cherry tomatoes, minced red onion and/or minced coriander.
    • Sandwich Bread: Simply choose your favorite type of bread. I highly recommend sourdough bread. This recipe could also easily be made gluten-free by choosing a gluten-free sandwich bread. 
    • Grilled Sandwich: For a grilled sandwich, add a generous amount of guacamole to both bread slices. Brush both sides with olive oil and toast the whole sandwich in a pan on both sides until brown and crunchy.
    • Topping Ideas: Cucumber, lettuce, microgreens, hummus, cheese, egg, olive oil, black pepper, chili flakes, mango habanero salsa
    • To store: Store any leftover guacamole separate from the bread in an airtight container in the fridge for up to 2 days.
