Pear Pancakes

Ingredients

Add pears, maple syrup and a dash of water to a small saucepan.

Step 1

Let simmer until soft and caramelized. Then set aside.

Step 2

Whisk together all the dry ingredients (flour, baking powder, cinnamon, salt).

Step 3

Add your milk of choice, ⅓ cup  of the caramelized pears and the egg (optional) to a blender. Blend until smooth.

Step 4

Add the wet ingredients to the dry ingredients and stir with a spatula until just combined.

Step 5

Add 1/4 cup of the pancake batter to a hot skillet coated with olive oil and let cook on medium heat.

Step 6

Flip with a spatula and cook on the other side.
